The signature is the Pistacchio di Bronte. The pistachio comes from the Bronte DOP area of Sicily — a specific geographic designation ensuring provenance and quality. The flavour is immediately distinctive: intensely savoury-sweet, pale green without artificial colouring, and nothing like the industrial pistachio products common across London.

The hazelnut gelato uses Piedmontese hazelnuts — the same variety preferred by Italy's finest confectionery producers. The chocolate is made with carefully sourced single-origin cacao. The milk gelato uses Somerset full-fat milk from a named farm. Every choice reflects the same principle: ingredient quality is the only thing that matters.
